Heat oil over medium heat and fry potatoes until tender and lightly-coloured. Remove from oil. Fry garlic and ginger in remaining oil until light brown. Remove. Pound garlic and ginger finely in mortar and pestle, followed in batches by the potatoes.
Combine pounded ingredients with the remaining beef patty ingredients. Mix well and form into small patties roughly 3cm in diameter.
Heat 3 – 4 tablespoons of oil in a non-stick frying pan and fry patties in batches till golden brown on both sides. Transfer onto a plate as they cook.
Heat ingredients for the sauce together, stirring until it comes to the boil. Gently toss cooked, drained spaghetti, begedil patties and sauce together. Garnish with chopped parsley or spring onion and serve at once.
GOES WELL WITH … most Raya dishes such as lemang and serunding.
For easy serving, begedil patties can be made and fried a day ahead and kept in a covered container in the refrigerator.
