PREGO® Macaroni, cooked according to packet instructions and drained
ripe mango, peeled and cut into 2cm cubes
orange, peeled and cut into 2cm chunks
canned pineapple rings, cut into 2cm pieces
strawberries, cut into quarters
tbsp raisins (or chopped dates)
cup toasted walnuts or flaked almonds
Dressing (stir together in a small bowl):
tbsp lemon juice
tsp finely grated lemon rind
Rinse cooked macaroni over running water and drain well. Prepare and cut all the fruits accordingly. These can be prepared and stored in a covered container in the refrigerator several hours in advance.
Close to serving time, combine salad and dressing ingredients together and serve chilled.

To make this salad even prettier, set a thin layer of jelly in small glass bowls or tumblers. Keep these chilled and when ready to serve, top jellies with the macaroni fruit salad.
