Lemony Scallop Angel Hair

A tasty fusion of zesty lemon, sweet tomato and sumptuous scallops tossed in al-dente angel hair. Serve for lunch or dinner in 20 mins or less!

    g of Prego Angel Hair, cook as per instruction on packet

    can (295g) of Prego Spicy Seafood Arrabbiata Pasta Sauce

    g of Scallop, large

  • ¼

    cup of Breadcrumbs

    tbsp of Lemon zest

  • 2-3

    tbsp of Butter

    g of Yellow onion, finely diced

  • 1

    pip of Garlic, minced

  • 50

    g of Yellow capsicum, julienned

  • 1

    tbsp of Lemon juice

  • To marinate the scallop for 5 minutes

  • ½

    tsp of Salt

  • ½

    tsp of Black pepper

    tsp of Paprika

  • ½

    tbsp of Lemon juice

    Gently heat up the pan and stir fry the breadcrumbs till light and golden. Toss in the lemon zest, dish up and set aside.

    Heat up butter in the pan and fry the marinated scallops till cooked through on both sides, dish up and set aside. Then, toss in the onion, garlic and stir fry till soft. Add in the yellow capsicum and stir fry for 30 seconds. Followed by Prego Angel Hair, Prego Spicy Seafood Arrabbiata Pasta Sauce and stir well to combine.

    Lastly, add in the scallops and mix well. Drizzle lemon juice on top and garnish with breadcrumbs. Serve immediately.
